Pacamara is a hybrid of two varietals with very different characters. Pacas is a compact, naturally occurring Bourbon mutation first identified in El Salvador in the 1950s, valued for its adaptability to the country's climate and growing conditions. Maragogype is a large-leafed Typica mutation from the Bahia region of Brazil, known for its oversized beans and lighter-bodied cup. The cross produces something distinct from either parent: large, irregular beans with the complexity of Maragogype and the structure of Pacas.
In the cup, Pacamara tends toward bright, fruit-forward profiles with good complexity and a fuller body than many Central American varietals. Natural processing, which is common for Pacamara in El Salvador and Guatemala, amplifies the fruit character toward stone fruit, tropical notes, and sweet syrupy finish. It responds well to medium roast and filter brewing, though well-developed medium-dark roasts can work well for espresso use. The large bean size requires careful attention to grind consistency.
