What started out a little bit of fun, turned out to be a very tasty occurance!
After cupping both the washed and natural, I found that while both really good, they each lacked what the other one had. The washed was floral, acidic and crisp but lacked soem body and sweetness and the natural wasn't as vibrant in flavour but had loads of body and sweetness, so playing with some ratios we found that the 50/50 gave the best balance and created an exciting and delicious new flavour profile!

Inmaculada Coffee Farms is located in the village of Pichindé, a county in the municipality of Cali, located within the state of Valle del Cauca, Colombia. Inmaculada Coffee Farms consists of 60 hectares of which 36 are planted with exotic varieties and the rest are untouched forest and facilities, nestled on the foothills of the Farallones National Park
Inmaculada Coffee Farms is located in the heart of the Andes, in the Pichindé district of Cali, at an altitude ranging from 1,700 to 2,000 meters above sea level. Surrounded by the beauty of the Farallones de Cali Natural Park, our farms host unique and exotic varieties such as Sudan Rume, Laurina, Geisha, and Eugeniodes—a specie we have rescued and processed naturally, which is considered one of the parents of modern Arabica coffee. At Inmaculada, we adopt agroforestry and sustainable practices, eliminating the use of synthetic fertilizers and agrochemicals to responsibly preserve our ecosystem
In 2022, the Fellow's Farms Program was created to help traditional coffee producers facing the challenges of market prices and climate change. As part of its corporate responsibility policy, Inmaculada established the Fellow's Farms program to improve production and harvesting practices and increase their incomes. The program also aims to showcase the farmers' work to global markets with traceability and high international standards. Actually, we work with farmers from the Huila region, sourcing specific coffee varieties from neighboring farms. The results are exceptional coffees that continue to impress in every tasting, maintaining Inmaculada's distinctive quality

Gesha coffee, sometimes referred to as Geisha coffee, is a variety of coffee tree that originated in the Gori Gesha forest, Ethiopia, though it is now grown in several other nations in Africa, Asia, and the Americas. It is widely known for its unique flavor profile of floral and sweet notes, its high selling price, and its exclusivity as its demand has increased over the years.
While there are many varieties labeled gesha (or geisha), the Panamanian Geisha has a distinct and verifiable genetic fingerprint.
After its discovery in Ethiopia, it was sent to the Tengeru (now Lyamungu) Coffee Research Station in Tanzania. In 1953, plants successfully cultivated at Lyamungu as VC-496 were taken to Centro Agronómico Tropical de Investigación y Enseñanza (CATIE) in Costa Rica and recorded as accession T2722. From there, CATIE distributed it throughout Central America.

- Process:
Washed - Reception and weighing of the cherry, classification by flotation to remove floaters and separate stages of maturity, double selection (manual and electronic) and controlled drying for 20-25 days maintaining the temperature below 40 °C with constant stirring.
Natural - After arrival at Inmaculada's mill, cherry is cleaned and sorted then placed in sealed tanks for a six-day anaerobic fermentation that lifts the acidity and reduces the sugar content. Following this, the coffee fruit is transferred to the drying house where a vacuum system offers a stable stable environment to withdraw moisture and humidity where the coffee is dried over 15 days.
