Colombia Jairo Arcila Decaf Natural - Espresso
A treat for all our Decaf customers! This is the second time we have had a natural processed Decaf coffee, It comes from a producer who we have had coffee from before, Jairo Arcila. This Castillo variety lot comes from his farm Santa Monica and was decaffeinated at DesCafecol using the sugar cane process.
This coffee has a very fruity profile, lots of sweetness and hard to believe that it is actually a decaf!

- Producer:
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila, who are the cofounders of Cofinet. Jairo’s first job was at Colombia’s second largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019.
Jairo bought his first coffee farm, Finca La Esmeralda, in 1987 and this is where he planted his first Caturra lot. He was fortunate enough to earn money by producing coffee on his farm in addition to working full time. Using his savings, Jairo slowly managed to purchase five additional farms. After Esmeralda came Villarazo, Mazatlan, Santa Monica, Maracay and then Buenos Aires. Now, during the harvest period, Jairo can provide jobs to the locals generating an economic impact in the community.
He received great insight and expertise from his sons’ in the picking, sorting, and processing of his coffees. This insight has empowered Jairo and given him the tools needed to showcase fantastic coffees with amazing profiles from the region.

- Variety:
Castillo and its sub cultivars are higher yield, resistance to leaf rust and other diseases common in Latin America. The cherries of Castillo plants are also slightly larger and display more resistance to pests and insects such as the coffee borer beetle (broca) Castillo is a ‘dwarfed’ tree that can be planted in high density (tighter groups), meaning a farmer can increase their yields per hectare.

- Process:
All specialty coffees are hand picked, careful attention is paid to collect only the ripest cherries, The coffee was sundried on raised beds in temperature-controlled conditions until the ideal moisture content is achieved.
After the natural process, the milled coffee is delivered to DesCafecol in Manizales where they use the sugar cane process to decaffeinate the coffee.
Ethyl acetate is a natural by product created in the production of sugar cane refining. The green beans are put into a steam chamber where the silver skin is removed from the bean. After this, the beans are submerged in spring water and as soon the coffee is saturated with water it is sent to the extractors where the beans have direct contact with sugar cane ethyl acetate for 8 hours which dissolves the caffeine content. Then the decaffeinated coffee is dried in a chamber to reach the same moisture content that it had prior to the process.
The ethyl acetate cane be re-used a number of times before it is sent on for refinement and the caffeine is then dried and sold to other industries such as pharmaceuticals and energy drinks manufacturers.
